Ingredients

The chicken

  • 16 ounces boneless skinless chicken breast

The coating

  • cup all-purpose flour
  • cup finely grated Parmesan cheese
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper

The cooking

  • 2 tablespoons oil
  • 2 tablespoons white wine or chicken broth

The sauce

  • 3 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 1 cup half and half

Instructions

  1. Pat the chicken breast dry.
  2. Combine the flour, parmesan, salt, and pepper in a shallow dish.
  3. Dip the chicken in the flour mixture and shake off the excess.
  4. Heat oil over medium heat in a large skillet.
  5. Add the chicken and cook until golden brown, about 5 to 7 minutes per side.
  6. Remove the chicken and tent to cover.
  7. Add the wine or broth to the skillet and deglaze the pan.
  8. Add the lemon juice, lemon zest, and half and half, and cook for 4 minutes, stirring constantly.
