Ingredients

  • 1 cup almond flour
  • ¾ cup creamy cashew butter
  • 1 tsp vanilla extract
  • ¼-½ cup maple syrup
  • ½ cup vegan marshmallows
  • cup vegan white chocolate chips
  • 1 unit flax egg or regular egg
  • 1 tsp baking soda

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix almond flour, maple syrup, vanilla extract, and cashew butter until well combined.
  3. Fold in the vegan white chocolate chips and marshmallows.
  4. Refrigerate the dough for 30 minutes to prevent spreading.
  5. After refrigeration, add the flax egg (or regular egg) and baking soda, mixing until fully combined.
  6. Using a cookie scoop or spoon, form 8-12 cookies and place them on the prepared baking sheet.
  7. Bake for 8-10 minutes, allowing the marshmallows to spread if necessary.
  8. Let the cookies cool before lifting them from the parchment paper.
