Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, mix almond flour, maple syrup, vanilla extract, and cashew butter until well combined.
- Fold in the vegan white chocolate chips and marshmallows.
- Refrigerate the dough for 30 minutes to prevent spreading.
- After refrigeration, add the flax egg (or regular egg) and baking soda, mixing until fully combined.
- Using a cookie scoop or spoon, form 8-12 cookies and place them on the prepared baking sheet.
- Bake for 8-10 minutes, allowing the marshmallows to spread if necessary.
- Let the cookies cool before lifting them from the parchment paper.
