Instructions
- Mix almond flour, peanut butter, coconut sugar, cocoa powder, and vanilla extract in a bowl until thick.
- Fold in chocolate chips and mini marshmallows.
- Refrigerate the dough for 30 minutes.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Stir in the egg (or flax egg) and baking soda into the dough.
- Form 12 cookies using a spoon or cookie scoop.
- Bake for 9-11 minutes, then let cool for a few minutes before serving.
- Store cookies in an airtight container in the fridge.
