Smoked Salmon Pinwheels

Ingredients

  • 8 ounces thinly sliced cold smoked salmon
  • 4 ounces 1/3 less fat cream cheese
  • ¼ medium cucumber, cut into matchsticks
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons capers, drained
  • ½ lemon sliced thin

Instructions

  1. Lay plastic wrap on a work surface.
  2. Arrange salmon slices to create a rectangle, about 6 inches wide by 12 inches long.
  3. Spread cream cheese over the salmon.
  4. Place cucumber sticks along one edge of the rectangle.
  5. Roll the salmon tightly around the cucumber using the plastic wrap.
  6. Refrigerate for at least 30 minutes until firm.
  7. Cut the roll into 16 half-inch thick slices.
  8. Sprinkle with red onion and capers, and serve with lemon slices.
