Smoked Salmon Pinwheels

thinly sliced cold smoked salmon

1/3 less fat cream cheese

cucumber, cut into matchsticks

finely chopped red onion

capers, drained

Instructions
- Lay plastic wrap on a work surface.
- Arrange salmon slices to create a rectangle, about 6 inches wide by 12 inches long.
- Spread cream cheese over the salmon.
- Place cucumber sticks along one edge of the rectangle.
- Roll the salmon tightly around the cucumber using the plastic wrap.
- Refrigerate for at least 30 minutes until firm.
- Cut the roll into 16 half-inch thick slices.
- Sprinkle with red onion and capers, and serve with lemon slices.
