Ingredients

  • 2 tablespoons shelled pistachios (not salted)
  • ½ cup hot water
  • 2 Medjool dates pitted (or use 1½ tablespoons maple syrup)
  • 1 cup hot brewed coffee

Instructions

  1. Blend the pistachios, water, and dates (or maple syrup) until smooth.
  2. Cover the vent of your blender loosely with a towel to allow steam to escape.
  3. Add the brewed coffee to the blender and blend again.
  4. Adjust sweetness to taste, adding more maple syrup or coffee if desired.
  5. Strain the latte through a fine mesh sieve if necessary.
  6. Serve warm immediately.
