Ingredients

The base

  • 2 slices multigrain bread
  • 4 tbsp sour cream
  • 2 oz shredded sharp cheddar cheese

The toppings

  • 1 tbsp extra-virgin olive oil
  • 2 large eggs
  • 4 oz smoked salmon
  • to taste salt and pepper
  • to garnish fresh herbs

Instructions

  1. Toast the bread slightly and place on a baking sheet.
  2. Spread sour cream on each slice, sprinkle with black pepper, and top with shredded cheddar cheese.
  3. Broil in the oven until cheese is melted and bubbly, watching closely to avoid burning.
  4. Heat olive oil in a skillet and cook the eggs to your liking, preferably sunny side up.
  5. Remove the bread from the oven and place on a plate.
  6. Divide the smoked salmon between the toasts and top each with an egg.
  7. Garnish with fresh herbs if desired and serve immediately.
