Ingredients

The béchamel sauce

  • 2 tbsp unsalted butter
  • 2 tbsp grated onion
  • 1 tbsp all-purpose flour
  • ¾ cup milk
  • 1 leaf bay leaf
  • ¼ cup grated Parmesan or Gruyere cheese
  • ½ tsp salt
  • a pinch freshly grated nutmeg

The sandwich

  • 4 slices French loaf bread or country bread
  • 4 to 6 slices good quality ham
  • 4 oz Gruyere cheese, grated
  • ¼ tsp herbes de Provence or thyme

Instructions

  1. Melt butter in a saucepan, add onions and cook until foaming.
  2. Stir in flour and cook until bubbling, then remove from heat.
  3. Whisk in milk until smooth, add bay leaf, and return to heat.
  4. Stir constantly for 8 to 10 minutes until thickened, then remove from heat and stir in cheese, salt, and nutmeg.
  5. Heat a skillet and brown each slice of bread in butter for about 2 minutes.
  6. Top each slice with ham and a mix of béchamel and Gruyere cheese.
  7. Cover with another slice of bread and spread remaining béchamel on top.
  8. Sprinkle with herbes de Provence or thyme and broil until bubbling and browned, about 2-3 minutes.
