The béchamel sauce

The sandwich

French loaf bread or country bread

good quality ham

Gruyere cheese, grated

herbes de Provence or thyme
Instructions
- Melt butter in a saucepan, add onions and cook until foaming.
- Stir in flour and cook until bubbling, then remove from heat.
- Whisk in milk until smooth, add bay leaf, and return to heat.
- Stir constantly for 8 to 10 minutes until thickened, then remove from heat and stir in cheese, salt, and nutmeg.
- Heat a skillet and brown each slice of bread in butter for about 2 minutes.
- Top each slice with ham and a mix of béchamel and Gruyere cheese.
- Cover with another slice of bread and spread remaining béchamel on top.
- Sprinkle with herbes de Provence or thyme and broil until bubbling and browned, about 2-3 minutes.
