Croque Madame

Instructions
- Melt 2 tablespoons of butter in a saucepan and sauté the onions until foaming.
- Add flour and cook while stirring for 1 to 2 minutes, then remove from heat.
- Whisk in milk gradually until smooth, then add bay leaf and thyme.
- Return to heat and stir for 8 to 10 minutes until thickened, then remove from heat and stir in Parmesan, salt, and nutmeg.
- Heat a skillet and brown the bread slices on both sides using half of the remaining butter.
- Layer ham on each slice of bread, then mix half of the Gruyere cheese with the béchamel sauce and spread it on top.
- Top with another slice of bread and spread the remaining béchamel and Gruyere cheese on top.
- Broil the sandwiches until the cheese is bubbling and browned, about 3 to 4 minutes.
- In a separate skillet, cook the eggs with salt and pepper until the whites are set but yolks are runny.
- Place a cooked egg on top of each sandwich and serve hot.
