Ingredients

Béchamel Sauce

  • 6 ounces unsalted butter
  • 2 tablespoons grated onion
  • 1 ½ tablespoons all-purpose flour
  • 1 cup milk
  • 1 leaf bay leaf
  • a dash thyme (optional)
  • ¼ cup grated Parmesan or Gruyere cheese
  • ½ teaspoon salt
  • a pinch freshly grated nutmeg

Bread

  • 8 slices thick French loaf bread
  • 8 to 12 slices good quality ham (about ¾ pound)
  • 12 ounces Gruyere cheese (grated, divided)
  • nonstick spray

Eggs

  • 4 eggs
  • salt and pepper to taste

Instructions

  1. Melt 2 tablespoons of butter in a saucepan and sauté the onions until foaming.
  2. Add flour and cook while stirring for 1 to 2 minutes, then remove from heat.
  3. Whisk in milk gradually until smooth, then add bay leaf and thyme.
  4. Return to heat and stir for 8 to 10 minutes until thickened, then remove from heat and stir in Parmesan, salt, and nutmeg.
  5. Heat a skillet and brown the bread slices on both sides using half of the remaining butter.
  6. Layer ham on each slice of bread, then mix half of the Gruyere cheese with the béchamel sauce and spread it on top.
  7. Top with another slice of bread and spread the remaining béchamel and Gruyere cheese on top.
  8. Broil the sandwiches until the cheese is bubbling and browned, about 3 to 4 minutes.
  9. In a separate skillet, cook the eggs with salt and pepper until the whites are set but yolks are runny.
  10. Place a cooked egg on top of each sandwich and serve hot.
