Croque Monsieur (Madame) with Poached Eggs

Instructions
- Prepare a pot with simmering water for poaching the eggs.
- In a saucepan, melt butter, add onion and salt, and cook until soft.
- Add flour to the onion mixture and cook for 2 minutes.
- Slowly stir in milk and add the bay leaf, bringing the mixture to a boil.
- Reduce heat and simmer for about 15 minutes, stirring occasionally.
- Preheat the broiler and broil the bread slices for about a minute on each side.
- Spread béchamel on each slice of bread, top with ham and cheese.
- Poach the eggs in the simmering water with vinegar for about 3-5 minutes.
- Broil the sandwiches until the cheese is bubbling and brown.
- Top each sandwich with a poached egg and season with salt and pepper.
