Croque Monsieur (Madame) with Poached Eggs

Ingredients

The sandwich

  • 2 slices good bread
  • 3 to 4 slices good ham
  • to taste grams grated Gruyère, Comté or Swiss cheese
  • to taste grams fresh thyme leaves

The béchamel sauce

  • 1 tablespoon butter
  • ¼ to ½ medium onion finely chopped
  • 1 tablespoon flour
  • 1 cup whole milk
  • 1 leaf bay leaf
  • to taste grams kosher salt

The poached eggs

  • 2 eggs for poaching
  • splash white vinegar

Instructions

  1. Prepare a pot with simmering water for poaching the eggs.
  2. In a saucepan, melt butter, add onion and salt, and cook until soft.
  3. Add flour to the onion mixture and cook for 2 minutes.
  4. Slowly stir in milk and add the bay leaf, bringing the mixture to a boil.
  5. Reduce heat and simmer for about 15 minutes, stirring occasionally.
  6. Preheat the broiler and broil the bread slices for about a minute on each side.
  7. Spread béchamel on each slice of bread, top with ham and cheese.
  8. Poach the eggs in the simmering water with vinegar for about 3-5 minutes.
  9. Broil the sandwiches until the cheese is bubbling and brown.
  10. Top each sandwich with a poached egg and season with salt and pepper.
