Grand Marnier Chocolate Truffles

Instructions
- Line a jelly roll pan with parchment or a Silpat.
- Bring the heavy cream to a boil while watching it closely.
- Break the chocolate into small chunks and place in a heat-safe bowl.
- Pour the boiling cream over the chocolate and let it sit covered for 3 minutes.
- Stir the mixture until smooth, using a double boiler if necessary.
- Add Grand Marnier and flaky sea salt to taste, then mix until smooth.
- Spread the mixture into the prepared pan and refrigerate for about 30 minutes until firm.
- Use a melon baller or scoop to shape the truffles and place them on a baking sheet.
- Refrigerate the shaped truffles for 15 minutes.
- Coat the truffles in cocoa powder or confectioners’ sugar before serving.
- Store the truffles in the fridge and allow them to come to room temperature before serving.
