20-Minute Rice Cooker Quinoa

Ingredients

The quinoa

  • 1 cup quinoa

The cooking oil

  • 1 spray olive oil spray

The liquid

  • 2 cups vegetable broth, juice, or water

Instructions

  1. Rinse the quinoa in a fine mesh strainer until the water runs clear.
  2. Spray the bottom of the rice cooker with olive oil.
  3. Add the rinsed quinoa to the rice cooker.
  4. Pour in 2 cups of liquid (broth, juice, or water).
  5. Turn on the rice cooker and cook for 15 minutes using the white rice setting.
  6. Once done, unplug the rice cooker and let it sit for an additional 5 minutes.
  7. Fluff the quinoa with a fork and serve.
