Ingredients

The filling

  • 4 pieces bell peppers (sliced)
  • 2 pieces onions (sliced)
  • ½ pound mushrooms (sliced)
  • 2 pieces Serrano peppers (finely chopped, optional)

The seasoning and oil

  • 2 tablespoons olive oil (or other cooking oil)
  • 2 teaspoons Emeril’s Essence
  • ¼ teaspoon cumin (ground)
  • 1 piece lime (juiced)
  • 2 tablespoons butter (melted)

Optional toppings

  • to taste whole-wheat tortillas (warmed)
  • to taste cheese (grated)
  • to taste tomatoes (diced)
  • to taste avocado (sliced)
  • to taste cilantro
  • to taste sour cream
  • to taste lime (wedges)
  • to taste corn salsa
  • to taste pico de gallo

Instructions

  1. Heat oil in a large sauté pan over medium-high heat.
  2. Add sliced onions and bell peppers to the pan and cook until they start to brown.
  3. In a small bowl, mix spices with lime juice and melted butter.
  4. Once the peppers and onions are browned, add mushrooms and the spice mixture.
  5. Cook for an additional 3 to 5 minutes and serve with warm tortillas and toppings.
