Ingredients

Salad Ingredients

  • 8 slices bacon
  • 4 large eggs
  • 1 large head romaine lettuce
  • cups cooked rotisserie chicken
  • cups grape tomatoes
  • ½ small red onion
  • 1 large avocado
  • 3 oz blue cheese

Dressing Ingredients

  • cup olive oil
  • 2 Tbsp red wine vinegar
  • 2 Tbsp lemon juice
  • 2 tsp Dijon mustard
  • 1 tsp honey
  • 1 tsp garlic
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with aluminum foil.
  2. Lay bacon strips on the baking sheet and bake until crisp, about 12 to 20 minutes.
  3. Drain the bacon on paper towels and chop it.
  4. For the eggs, boil water in a pot, add eggs, cover, and cook for 14 minutes.
  5. Transfer eggs to ice water, let cool, then peel and chop them.
  6. In a large salad bowl, layer the chopped romaine lettuce.
  7. Top the lettuce with chopped bacon, eggs, grape tomatoes, red onion, avocado, and blue cheese.
  8. Whisk the dressing ingredients together and pour over the salad before serving.
