Instructions
- Cook the chopped bacon in a skillet until crispy, then let it cool on a paper towel.
- Mix all dressing ingredients in a bowl until well combined.
- Season the chicken breasts with salt, pepper, and Creole seasoning.
- Heat olive oil in a skillet and cook the chicken for 5-6 minutes on each side until cooked through.
- Let the chicken rest for 5 minutes, then slice it.
- Prepare all other salad ingredients by chopping or slicing them.
- Hard boil the eggs, peel, and quarter them.
- Chop and rinse the romaine lettuce, then arrange it on a platter.
- Layer the remaining salad ingredients over the lettuce.
- Sprinkle with chives and drizzle dressing over the salad just before serving.
