Ingredients

The Salad

  • 4 slices bacon
  • 1 pound boneless skinless chicken breast
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon Creole seasoning
  • 1 unit avocado
  • 1 cup cherry tomatoes
  • ½ cup red onion
  • 2 unit hard-boiled eggs
  • 1 large head romaine lettuce
  • ½ cup blue cheese
  • 2 tablespoons chives

Cobb Salad Dressing

  • ½ cup olive oil
  • 1 teaspoon garlic
  • 2 tablespoons red wine vinegar
  • ¼ cup honey
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon Italian seasoning

Instructions

  1. Cook the chopped bacon in a skillet until crispy, then let it cool on a paper towel.
  2. Mix all dressing ingredients in a bowl until well combined.
  3. Season the chicken breasts with salt, pepper, and Creole seasoning.
  4. Heat olive oil in a skillet and cook the chicken for 5-6 minutes on each side until cooked through.
  5. Let the chicken rest for 5 minutes, then slice it.
  6. Prepare all other salad ingredients by chopping or slicing them.
  7. Hard boil the eggs, peel, and quarter them.
  8. Chop and rinse the romaine lettuce, then arrange it on a platter.
  9. Layer the remaining salad ingredients over the lettuce.
  10. Sprinkle with chives and drizzle dressing over the salad just before serving.
