Instructions
- Make the pickled shallots if using.
- Whisk together the red wine vinegar, minced garlic, dijon, oregano, chives, salt, and pepper to make the dressing. Slowly drizzle in olive oil while emulsifying.
- Chop the lettuce and slice the tomatoes and cucumbers.
- Toss the lettuce with some dressing and place in serving bowls or a platter.
- Layer the salad with chicken, tomatoes, cucumber, shallots, avocado, blue cheese, and boiled eggs.
- Drizzle with more dressing and sprinkle with bacon, chives, oregano, microgreens, and pepper.
- Serve with leftover dressing on the side.
