No-Bake Carrot Cake Bites

Ingredients

The base

  • 1 ¾ cups oat flour
  • ½ cup vanilla plant-based protein powder
  • ¼ cup unsweetened shredded coconut
  • 1 cup shredded carrot

The wet ingredients

  • ½ cup creamy cashew butter or almond butter
  • ¼ cup unsweetened vanilla almond milk
  • ¼ cup maple syrup

The spices and flavorings

  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • tsp nutmeg
  • ¼ tsp fine sea salt
  • ¼ cup raisins (optional)

Instructions

  1. Soak the raisins in warm water to plump them up.
  2. Shred the carrots using a food processor or box grater.
  3. In a large bowl, whisk together the oat flour, protein powder, coconut, cinnamon, ginger, nutmeg, and salt.
  4. Drain the raisins and add the almond butter, almond milk, maple syrup, shredded carrots, and drained raisins to the dry ingredients.
  5. Mix everything together until fully combined, adding more almond milk if necessary.
  6. Roll the mixture into 20 balls.
  7. Store the bites in an air-tight container in the refrigerator or freezer.
