No-Bake Carrot Cake Bites

Instructions
- Soak the raisins in warm water to plump them up.
- Shred the carrots using a food processor or box grater.
- In a large bowl, whisk together the oat flour, protein powder, coconut, cinnamon, ginger, nutmeg, and salt.
- Drain the raisins and add the almond butter, almond milk, maple syrup, shredded carrots, and drained raisins to the dry ingredients.
- Mix everything together until fully combined, adding more almond milk if necessary.
- Roll the mixture into 20 balls.
- Store the bites in an air-tight container in the refrigerator or freezer.
