Carrot Cake Energy Bites

Ingredients

  • 2 large carrots
  • 1 1/3 cup old fashioned rolled oats
  • 2/3 cup raisins
  • 1/4 cup almond butter
  • 1/8 cup coconut flour
  • 1 Tbsp honey (or other sticky sweetener)
  • 1 tsp heart healthy oil (i.e. canola, flaxseed, olive oil, etc)
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1/4 tsp vanilla extract

Instructions

  1. Place all the ingredients in a food processor or blender.
  2. Blend until everything is well incorporated and sticks together.
  3. Roll about 1 Tbsp of the dough into a ball. If it's too sticky, refrigerate for about 30 minutes.
  4. Once all the dough is rolled into balls, refrigerate until firm (about 10 minutes).
  5. Enjoy your bite-sized carrot cake or pack them for an on-the-go treat!
