Carrot Cake Energy Bites

Ingredients

  • 2 large carrots
  • 1 ⅓ cup old fashioned rolled oats
  • cup raisins
  • ¼ cup almond butter
  • cup coconut flour
  • 1 Tbsp honey (or other sticky sweetener)
  • 1 tsp heart healthy oil (i.e. canola, flaxseed, olive oil, etc)
  • 1 tsp cinnamon
  • ¼ tsp allspice
  • ¼ tsp nutmeg
  • ¼ tsp vanilla extract

Instructions

  1. Combine all ingredients in a food processor or blender.
  2. Blend until well incorporated and the mixture sticks together.
  3. Roll about 1 tablespoon of the mixture into a ball. If too sticky, refrigerate for 30 minutes.
  4. Once all balls are formed, refrigerate them until firm, about 10 minutes.
  5. Enjoy the energy bites or pack them for a snack on the go.
