No Bake Carrot Cake Energy Bites

Ingredients

The mixture

  • 1 cup pecans
  • 1 cup dates, Medjool or regular, chopped
  • 2 cups shredded carrots
  • 1 cup shredded coconut flakes
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon sea salt

Optional

  • raisins

Instructions

  1. Grind all the ingredients except for ½ cup of coconut flakes in a food processor until the mixture turns into a dough.
  2. Roll the mixture into round balls using saran wrap to help form them.
  3. Roll the balls in the remaining ½ cup of shredded coconut flakes.
  4. Place the energy bites in the fridge for at least an hour before enjoying.
