Easy Carrot Cake Bites

Ingredients

  • 1 cup raw walnuts
  • 1 cup shredded unsweetened coconut
  • 1 teaspoon ground cinnamon
  • teaspoon ground ginger
  • ¼ teaspoon fine sea salt
  • ½ teaspoon vanilla extract
  • 1 medium carrot, peeled & shredded (about ½ cup)
  • ¾ cup soft Medjool dates, pitted

Instructions

  1. Process the walnuts, shredded coconut, cinnamon, ginger, and sea salt in a food processor until it resembles coarse flour.
  2. Add the pitted dates, shredded carrots, and vanilla extract, then process until the mixture is crumbly but sticks together when pressed.
  3. Scoop the mixture using a tablespoon or cookie scoop, roll into balls, and optionally coat with extra coconut.
  4. Chill the balls in the fridge for at least 1 hour before storing in an airtight container.
