Instructions
- Process the walnuts, shredded coconut, cinnamon, ginger, and sea salt in a food processor until it resembles coarse flour.
- Add the pitted dates, shredded carrots, and vanilla extract, then process until the mixture is crumbly but sticks together when pressed.
- Scoop the mixture using a tablespoon or cookie scoop, roll into balls, and optionally coat with extra coconut.
- Chill the balls in the fridge for at least 1 hour before storing in an airtight container.
