Instructions
- Pulse carrot chunks in a food processor until finely chopped.
- Remove the carrots and pulse oats and coconut until coarsely ground.
- Combine all ingredients, including the chopped carrots, and pulse until a sticky dough forms.
- Add white chocolate chips and pulse until chopped.
- Roll the mixture into balls and store in the fridge or freezer.
