Raw Vegan Carrot Cake Bites

Ingredients

  • 1 medium carrot, peeled and chopped
  • ½ cup almond butter
  • ½ cup pure maple syrup
  • 2 cups flaked unsweetened coconut
  • 2 cups old fashioned oats
  • ½ teaspoon salt
  • ½ teaspoon vanilla
  • 1 teaspoon cinnamon
  • to taste white chocolate chips (optional)

Instructions

  1. Pulse carrot chunks in a food processor until finely chopped.
  2. Remove the carrots and pulse oats and coconut until coarsely ground.
  3. Combine all ingredients, including the chopped carrots, and pulse until a sticky dough forms.
  4. Add white chocolate chips and pulse until chopped.
  5. Roll the mixture into balls and store in the fridge or freezer.
