Ingredients

The base ingredients

  • ½ cup oat flour or unflavored protein powder
  • ½ cup grated carrots
  • ¼ cup almond butter
  • 2 tablespoons maple syrup
  • 1-2 tablespoons apple sauce
  • 2 tablespoons chopped walnuts or pecans

The seasonings

  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon sea salt
  • teaspoon ground ginger
  • teaspoon ground cloves

Optional ingredients

  • 6 tablespoons unsweetened shredded coconut

Instructions

  1. Mix all the base ingredients in a bowl until well combined.
  2. Chill the mixture in the fridge to firm up.
  3. Roll the mixture into 10 balls.
  4. If desired, coat the balls in shredded coconut.
  5. Enjoy your energy balls!
