Ingredients

The egg mixture

  • 4 large eggs
  • ¼ cup cottage cheese
  • ¼ teaspoon salt
  • teaspoon black pepper

The vegetables and cheese

  • ¼ cup bell pepper, chopped
  • ¼ cup fresh spinach, chopped
  • ½ cup shredded cheddar cheese

Instructions

  1. Blend the eggs, cottage cheese, salt, and black pepper until smooth.
  2. Stir in the chopped bell pepper, spinach, and shredded cheddar cheese.
  3. Spray the silicone egg mold with cooking oil and fill each mold with the egg mixture.
  4. Pour one cup of water into the Instant Pot.
  5. Cover the mold with a silicone lid or parchment paper and place it on the steam rack in the Instant Pot.
  6. Secure the lid and cook on Manual Low Pressure for 8 minutes.
  7. Manually release the steam and carefully remove the egg bites from the pot.
