Ingredients

The egg mixture

  • 4 large eggs
  • cup cottage cheese
  • ¼ cup shredded cheddar cheese
  • ¼ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

The meat

  • 2 slices bacon (cooked and crumbled)

Instructions

  1. Blend the eggs, cottage cheese, cheddar cheese, salt, and pepper until smooth.
  2. Divide the crumbled bacon between the egg bite molds.
  3. Pour the egg mixture into the molds until nearly full, cover with a lid and foil.
  4. Add 1 ½ cups of water to the Instant Pot and place a metal rack inside.
  5. Put the filled molds on the rack, close the lid, and set to seal.
  6. Cook at high pressure for 9 minutes.
  7. Allow natural pressure release for 10 minutes, then perform a quick release.
  8. Invert the molds onto a plate and serve warm.
