30-Minute Instant Pot Egg Bites

Instructions
- Blend the eggs, cottage cheese, cheddar cheese, salt, and pepper until smooth.
- Divide the crumbled bacon between the egg bite molds.
- Pour the egg mixture into the molds until nearly full, cover with a lid and foil.
- Add 1 ½ cups of water to the Instant Pot and place a metal rack inside.
- Put the filled molds on the rack, close the lid, and set to seal.
- Cook at high pressure for 9 minutes.
- Allow natural pressure release for 10 minutes, then perform a quick release.
- Invert the molds onto a plate and serve warm.
