Ingredients

The fudge

  • 2 cups peanut butter
  • ½ cup brown rice syrup
  • cups oat flour
  • ½ cup vanilla protein powder
  • 1 cup milk

The topping

  • cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Line an 8x8 inch loaf pan or cake tin with parchment paper.
  2. In a mixing bowl, combine oat flour and vanilla protein powder.
  3. In a separate bowl, melt peanut butter and brown rice syrup together.
  4. Mix the wet ingredients into the dry ingredients until fully incorporated, adding milk if needed.
  5. Pour the batter into the lined pan and press firmly.
  6. Refrigerate for at least 20 minutes to firm up.
  7. Melt chocolate chips with coconut oil and drizzle over the fudge.
  8. Let the chocolate set before slicing and serving.
