Ingredients

The fudge

  • 2 cups desiccated unsweetened coconut
  • 1 cup creamy peanut butter
  • ½ cup melted coconut oil
  • 3-5 Tbsp maple syrup
  • 1 pinch sea salt (optional)
  • 1 tsp pure vanilla extract (optional)

Optional toppings

  • to taste crushed peanuts
  • to taste coconut flakes

Instructions

  1. Line a standard 9x5-inch loaf pan with parchment paper and set aside.
  2. Blend the desiccated coconut in a food processor on high until it forms a creamy butter, about 4 minutes.
  3. Add the peanut butter and melted coconut oil to the processor and blend again.
  4. Incorporate the maple syrup one tablespoon at a time until the desired sweetness is achieved.
  5. Optionally, mix in sea salt and vanilla, adjusting flavors as needed.
  6. Transfer the mixture to the lined loaf pan and spread it evenly.
  7. Optionally, add crushed peanuts or coconut flakes on top.
  8. Freeze until firm, about 15 minutes, then slice into squares.
  9. Enjoy immediately or store leftovers in the refrigerator for up to 10 days or in the freezer for up to 1 month.
