Ingredients

The oats mixture

  • 1 cup unsweetened almond milk
  • 1 tablespoon chia seeds
  • 2 scoops unsweetened protein powder
  • 2 teaspoons raw honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¼ cup fresh or frozen blueberries
  • 1 lemon zest

Optional toppings

  • to taste nut butter or chopped almonds

Instructions

  1. Combine rolled oats, almond milk, chia seeds, protein powder, sweetener, vanilla extract, blueberries, and lemon zest in a jar or bowl.
  2. Stir the mixture well to combine all ingredients.
  3. Cover the bowl or jar and refrigerate for at least 2 hours or up to 24 hours.
  4. When ready to serve, stir the mixture again and serve cold or at room temperature. Add any desired toppings.
