Vegan Peach Cobbler

arrowroot or corn starch or tapioca flour (if using frozen peaches)

gluten free flour (or regular flour)

coconut sugar

vegan butter or regular butter, melted

Instructions
- Preheat the oven to 350°F.
- Slice the peaches and place them in a deep pie dish or 8 x 8 baking dish.
- Sprinkle ¼ cup of coconut sugar on top and toss the peaches.
- If using frozen peaches, toss them in the arrowroot/corn starch/tapioca flour first, then sprinkle with coconut sugar.
- In another bowl, combine the flour, remaining coconut sugar, baking powder, melted butter, and sea salt.
- Mix until a dough forms and spoon it on top of the peaches.
- Bake for 30 minutes.
- Serve topped with ice cream.
