Vegan Peach Cobbler

Ingredients

  • 4 pieces fresh peaches, cut into slices
  • 1 tablespoon arrowroot or corn starch or tapioca flour (if using frozen peaches)
  • ¾ cup gluten free flour (or regular flour)
  • ½ cup coconut sugar
  • 1 teaspoon baking powder
  • ¼ cup vegan butter or regular butter, melted
  • 1 teaspoon sea salt
  • to taste serving ice cream to top

Instructions

  1. Preheat the oven to 350°F.
  2. Slice the peaches and place them in a deep pie dish or 8 x 8 baking dish.
  3. Sprinkle ¼ cup of coconut sugar on top and toss the peaches.
  4. If using frozen peaches, toss them in the arrowroot/corn starch/tapioca flour first, then sprinkle with coconut sugar.
  5. In another bowl, combine the flour, remaining coconut sugar, baking powder, melted butter, and sea salt.
  6. Mix until a dough forms and spoon it on top of the peaches.
  7. Bake for 30 minutes.
  8. Serve topped with ice cream.
