Instructions
- Preheat the oven to 350°F (175°C).
- Chop the peaches and mix them with maple syrup in a baking dish.
- In a bowl, combine oat flour, almond flour, potato starch, baking powder, and sea salt.
- Make a well in the dry ingredients and add maple syrup, milk, vanilla extract, and apple cider vinegar.
- Mix until just combined, then drop spoonfuls of the mixture on top of the peach filling.
- Bake for 20 minutes until the topping is just brown.
- If using, sprinkle sugar on top and broil for 1-2 minutes for a golden finish.
- Allow to cool completely before serving.
