Ingredients

The peach filling

  • 5 cups peaches
  • ¼ cup brown sugar
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon xanthan gum

The biscuit topping

  • 1 cup almond flour
  • 2 tablespoons arrowroot powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 4 tablespoons milk

Instructions

  1. Preheat the oven to 180C/350F and grease a 9x13-inch baking dish.
  2. In a bowl, combine the peach filling ingredients and mix well, then pour into the baking dish and spread evenly.
  3. Bake the peach filling for 15 minutes.
  4. In another bowl, whisk together the biscuit topping ingredients until a thick dough forms.
  5. Remove the baking dish from the oven and drop spoonfuls of the biscuit topping onto the peaches.
  6. Bake for an additional 15-20 minutes or until the topping is golden brown.
  7. Let the cobbler cool for 5 minutes before serving.
