Ingredients

Peach Filling

  • 2 cups peaches, sliced
  • 3 cups pumpkin, chopped
  • ΒΌ cup granulated sweetener of choice
  • 1 tablespoon cinnamon
  • 1 teaspoon xanthan gum
  • 2 teaspoons lemon juice

Biscuit Topping

  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 2 tablespoons brown sugar substitute
  • 2 tablespoons allulose
  • 1 large egg
  • 3 tablespoons butter, melted
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 350F (180C) and grease a large baking dish.
  2. Steam the pumpkin until tender and let it cool completely.
  3. Mix all the filling ingredients together and transfer to the baking dish, then bake for 10-15 minutes.
  4. Prepare the biscuit topping by whisking together the dry ingredients, then adding the egg, melted butter, and heavy cream and mixing until combined.
  5. Remove the baking dish from the oven and scoop portions of the biscuit topping over the filling.
  6. Bake again for 15-20 minutes or until golden brown.
  7. Let the cobbler sit at room temperature for 10 minutes before serving.
