Instructions
- Preheat the oven to 375°F (176°C).
- In a large saucepan, combine the peaches, both types of Besti, cinnamon, and sea salt. Cook over medium heat for about 15 minutes until the peaches soften.
- Sprinkle xanthan gum over the peaches and stir until thickened.
- Arrange the peach filling in a single layer in a 9×9 baking dish.
- In a food processor, combine almond flour, Besti, baking powder, and sea salt. Process until uniform.
- Add cold butter and pulse until crumbly.
- Add egg, cream, and vanilla. Pulse until combined.
- Drop tablespoons of batter over the peaches, covering most of the top but leaving some spots uncovered.
- Bake for about 15 minutes until the top is golden brown.
