Ingredients

Filling

  • 5 medium Peaches (peeled, cored, and sliced; ~4 cups)
  • 6 tbsp Besti Monk Fruit Allulose Blend
  • 1 tbsp Besti Brown Monk Fruit Allulose Blend
  • ¼ tsp Cinnamon (optional)
  • tsp Sea salt
  • ¼ tsp Xanthan gum

Topping

  • 1 cup Wholesome Yum Blanched Almond Flour
  • ¼ cup Besti Monk Fruit Allulose Blend
  • 1 tsp Baking powder
  • ¼ tsp Sea salt
  • ¼ cup Unsalted butter (cold)
  • 1 large Egg
  • 2 tbsp Heavy cream
  • 1 tsp Vanilla extract

Instructions

  1. Preheat the oven to 375°F (176°C).
  2. In a large saucepan, combine the peaches, both types of Besti, cinnamon, and sea salt. Cook over medium heat for about 15 minutes until the peaches soften.
  3. Sprinkle xanthan gum over the peaches and stir until thickened.
  4. Arrange the peach filling in a single layer in a 9×9 baking dish.
  5. In a food processor, combine almond flour, Besti, baking powder, and sea salt. Process until uniform.
  6. Add cold butter and pulse until crumbly.
  7. Add egg, cream, and vanilla. Pulse until combined.
  8. Drop tablespoons of batter over the peaches, covering most of the top but leaving some spots uncovered.
  9. Bake for about 15 minutes until the top is golden brown.
