Healthy Sugar-Free Peach Cobbler

Instructions
- Combine the dry ingredients for the crust in a bowl.
- Mix the wet ingredients in a separate bowl.
- Combine the dry and wet ingredients in a food processor and pulse until incorporated.
- Form the dough into a ball, slice in half, and refrigerate for 30 minutes to overnight.
- Preheat the oven to 350°F.
- In a saucepan, melt butter and add sweeteners, nutmeg, and cinnamon, stirring until melted.
- Add lemon juice and vanilla, then stir in peaches and cook for 4-5 minutes.
- Make a slurry with cornstarch and water, add to the peach mixture, and cook until thickened.
- Spray a baking dish and place half of the pie crust at the bottom.
- Use a slotted spoon to add the peach mixture on top of the crust.
- Add strips of pie crust on top, brush with egg wash, and sprinkle with cinnamon.
- Bake for 25 minutes, then tent with foil and bake for an additional 20-25 minutes.
