Healthy Sugar-Free Peach Cobbler

Ingredients

Crust

  • 4 cups blanched almond flour
  • ½ teaspoon salt
  • ½ cup sweetener or sugar
  • 2 large eggs
  • 6 tablespoons unsalted butter, melted

Peach Filling

  • ½ cup unsalted butter
  • ½ cup brown sweetener or light brown sugar
  • ½ cup sweetener or sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ of a lemon juice
  • 2 teaspoons vanilla extract
  • 20 oz frozen peaches
  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • 1 large egg (beaten with 1 teaspoon of water for egg wash)
  • to taste cinnamon for topping

Instructions

  1. Combine the dry ingredients for the crust in a bowl.
  2. Mix the wet ingredients in a separate bowl.
  3. Combine the dry and wet ingredients in a food processor and pulse until incorporated.
  4. Form the dough into a ball, slice in half, and refrigerate for 30 minutes to overnight.
  5. Preheat the oven to 350°F.
  6. In a saucepan, melt butter and add sweeteners, nutmeg, and cinnamon, stirring until melted.
  7. Add lemon juice and vanilla, then stir in peaches and cook for 4-5 minutes.
  8. Make a slurry with cornstarch and water, add to the peach mixture, and cook until thickened.
  9. Spray a baking dish and place half of the pie crust at the bottom.
  10. Use a slotted spoon to add the peach mixture on top of the crust.
  11. Add strips of pie crust on top, brush with egg wash, and sprinkle with cinnamon.
  12. Bake for 25 minutes, then tent with foil and bake for an additional 20-25 minutes.
