Ingredients

Filling

  • 8 medium ripe peaches or 4 ten-ounce bags of frozen peach slices, defrosted and drained
  • ½ cup coconut sugar or white sugar
  • 2 teaspoons cornstarch or arrowroot powder

Topping

  • 1 cup blanched almond flour
  • ½ cup coconut sugar or white sugar
  • teaspoons baking powder
  • ½ teaspoon sea salt
  • ½ cup unsweetened almond milk
  • 6 tablespoons butter or vegan butter, cut into small pieces

Optional for Serving

  • to taste vanilla ice cream (regular or dairy-free)
  • to taste whipped cream (regular or dairy-free)

Instructions

  1. Preheat the oven to 350°F and spray a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large bowl, combine the peaches, ½ cup sugar, and cornstarch or arrowroot, then pour into the baking dish.
  3. In another bowl, mix the almond flour, remaining ½ cup sugar, baking powder, sea salt, almond milk, and butter until moist.
  4. Dollop the topping over the peaches and bake for 35 minutes until golden brown and bubbling.
  5. Let cool for a few minutes before serving, optionally with whipped cream or ice cream.
