Instructions
- 1. Preheat the oven to 350°F and adjust the oven rack to the lower-middle position.
- 2. Place butter in an 8-inch square baking dish or 8-10 inch cast iron skillet and melt it in the oven.
- 3. In a small bowl, whisk together flour, ¾ cup sugar, baking powder, and salt.
- 4. Add milk and almond extract to the dry ingredients and whisk gently until just combined.
- 5. Once the butter is melted, remove the pan from the oven and pour the batter into the pan without stirring it into the butter.
- 6. Arrange the sliced peaches over the batter and sprinkle with the remaining tablespoon of sugar.
- 7. Bake for 40 to 50 minutes until the batter is browned.
- 8. Serve warm, optionally with a scoop of vanilla ice cream.
