Ingredients

The cobbler

  • 6 Tablespoon Butter
  • ¾ cup Flour
  • ¾ cup Sugar
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ¾ cup Milk
  • ¼ teaspoon Almond Extract (optional)

The filling

  • 2 cups Fresh Peaches (peeled, pit removed, sliced)

Instructions

  1. 1. Preheat the oven to 350°F and adjust the oven rack to the lower-middle position.
  2. 2. Place butter in an 8-inch square baking dish or 8-10 inch cast iron skillet and melt it in the oven.
  3. 3. In a small bowl, whisk together flour, ¾ cup sugar, baking powder, and salt.
  4. 4. Add milk and almond extract to the dry ingredients and whisk gently until just combined.
  5. 5. Once the butter is melted, remove the pan from the oven and pour the batter into the pan without stirring it into the butter.
  6. 6. Arrange the sliced peaches over the batter and sprinkle with the remaining tablespoon of sugar.
  7. 7. Bake for 40 to 50 minutes until the batter is browned.
  8. 8. Serve warm, optionally with a scoop of vanilla ice cream.
