Ingredients

The filling

  • 2 lbs fresh peaches, sliced
  • 3 tbsp coconut sugar (or pure maple syrup)
  • 1 tbsp tapioca flour
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg

The topping

  • ¼ cup coconut butter, melted
  • ½ cup coconut milk
  • ¼ cup pure maple syrup
  • 1 tsp vanilla
  • 1 cup almond flour
  • 2 tbsp tapioca flour
  • ¼ tsp sea salt

Instructions

  1. Preheat the grill or oven to 375°F.
  2. Mix the filling ingredients in a large bowl and coat the peaches evenly.
  3. Transfer the peach mixture to a cast iron skillet.
  4. In the same bowl, combine the almond flour, tapioca flour, and sea salt.
  5. Add the melted coconut butter, coconut milk, maple syrup, and vanilla to the dry ingredients and mix to form a batter.
  6. Drop dollops of the batter on top of the peaches, leaving some gaps.
  7. Cook in the grill or oven for 25-30 minutes until bubbly and golden brown.
  8. Serve and enjoy, optionally with coconut ice cream or whipped coconut cream.
