Instructions
- Preheat the grill or oven to 375°F.
- Mix the filling ingredients in a large bowl and coat the peaches evenly.
- Transfer the peach mixture to a cast iron skillet.
- In the same bowl, combine the almond flour, tapioca flour, and sea salt.
- Add the melted coconut butter, coconut milk, maple syrup, and vanilla to the dry ingredients and mix to form a batter.
- Drop dollops of the batter on top of the peaches, leaving some gaps.
- Cook in the grill or oven for 25-30 minutes until bubbly and golden brown.
- Serve and enjoy, optionally with coconut ice cream or whipped coconut cream.
