Ingredients

The dressing

  • cup cashews (raw or dry roasted)
  • ¾ cup unsweetened plain dairy-free milk
  • ½ cup olive oil, avocado oil, or grapeseed oil
  • 4 teaspoons lemon juice
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon maple syrup or honey (optional)
  • 1 teaspoon sea salt
  • ½ teaspoon ground mustard
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 2 teaspoons dried parsley or ¼ cup chopped fresh parsley

For the platter

  • to taste none vegetables of choice (sliced, e.g., carrots, celery, broccoli, grape tomatoes)
  • to taste none herbs and lemon slices (to garnish)
  • to taste none gluten free or paleo-friendly crackers (optional)

Instructions

  1. Blend cashews until powdered.
  2. Add cashew powder, dairy-free milk, oil, lemon juice, vinegar, sweetener, salt, mustard, onion powder, garlic powder, and pepper into a blender and blend until smooth.
  3. Stir in parsley and refrigerate for at least 30 minutes to thicken and develop flavors.
  4. For the platter, place ranch in a bowl and arrange fresh vegetables and crackers around it, garnishing with herbs and lemon slices.
