Vegan Ranch Dressing

Ingredients

  • 1 cup raw cashews
  • ¾ cup ice water
  • teaspoons Diamond Crystal kosher salt
  • ¼ cup fresh lemon juice
  • 1 clove garlic
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon maple syrup
  • ½ cup chives
  • to taste optional flaky sea salt

Instructions

  1. Combine cashews, ice water, salt, lemon juice, garlic, olive oil, and maple syrup in a high-speed blender.
  2. Blend at low speed for 10 seconds, then increase to high speed and blend for another 50 seconds until smooth.
  3. Taste and adjust with flaky sea salt if necessary.
  4. Add chives and blend on low for another 10 seconds.
  5. Transfer to a storage jar and refrigerate for at least 2 hours to allow flavors to develop.
  6. Before serving, thin with water if needed and use as a dip or dressing.
