Ingredients

The dressing base

  • ½ cup raw cashews
  • ½ cup warm water
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • ¾ teaspoon salt
  • ½ teaspoon spicy brown mustard
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

The herbs

  • 2 teaspoons dried parsley
  • 1 teaspoon dried chives
  • ¼ teaspoon dried dill (optional)

Instructions

  1. Soak the cashews in warm water for 5 to 10 minutes.
  2. Blend the soaked cashews and their water with olive oil, lemon juice, apple cider vinegar, salt, mustard, onion powder, garlic powder, and black pepper until smooth.
  3. Add the dried herbs and pulse briefly to combine without over-blending.
  4. Taste and adjust seasoning if necessary, then refrigerate for at least 30 minutes before serving.
