Ingredients

  • 1 cup raw cashews, soaked overnight
  • ¾ cup fresh water
  • 3 cloves garlic, peeled
  • 1 tablespoon lime or lemon juice
  • ½ teaspoon dried onion
  • 1 teaspoon dried chives
  • ¼ teaspoon freshly ground black pepper
  • tablespoons fresh dill, chopped
  • ½ teaspoon sea salt

Instructions

  1. Combine all ingredients in a high-speed blender.
  2. Blend until smooth and creamy, using the dressing setting if available.
  3. Taste and adjust seasoning, adding more water for a thinner consistency or more lime/lemon juice for tanginess.
  4. Serve immediately or store in the fridge for up to a week.
