Easy Vegan Ranch Dressing

Instructions
- Soak cashews in hot water for 30 minutes to 1 hour, or overnight in cool water.
- While cashews soak, mix almond milk with lemon juice and set aside to curdle.
- Drain and rinse the soaked cashews, then blend with almond buttermilk, garlic, salt, pepper, onion powder, vinegar, and maple syrup until smooth.
- Add herbs and pulse to combine without fully puréeing.
- Taste and adjust seasoning as needed.
- Use immediately or refrigerate for 3-4 hours to thicken.
