Orange Vinaigrette

minced shallot

orange zest

Instructions
- Zest the orange(s) and measure ½ cup of orange juice into a small pot.
- Bring the orange juice to a boil, then reduce to a strong simmer and reduce by half.
- Pour the reduced orange juice into a bowl with at least a 3 cup capacity.
- While the juice is reducing, mince the shallot.
- Add the remaining ingredients to the bowl with the reduced orange juice and whisk to combine.
- Taste and adjust flavors as needed, adding more zest, lemon juice, salt, or water.
- Refrigerate the vinaigrette; flavors improve overnight.
