Orange Vinaigrette

Ingredients

  • ½ cup fresh orange juice
  • 1 tablespoon lemon juice
  • 3 tablespoons champagne vinegar
  • ¼ cup extra virgin olive oil
  • ¼ cup light tasting olive oil or salad oil
  • 1 tablespoon minced shallot
  • 1 teaspoon orange zest
  • ¼ teaspoon dried thyme
  • a pinch salt
  • a pinch pepper

Instructions

  1. Zest the orange(s) and measure ½ cup of orange juice into a small pot.
  2. Bring the orange juice to a boil, then reduce to a strong simmer and reduce by half.
  3. Pour the reduced orange juice into a bowl with at least a 3 cup capacity.
  4. While the juice is reducing, mince the shallot.
  5. Add the remaining ingredients to the bowl with the reduced orange juice and whisk to combine.
  6. Taste and adjust flavors as needed, adding more zest, lemon juice, salt, or water.
  7. Refrigerate the vinaigrette; flavors improve overnight.
