Orange Vinaigrette

Ingredients

  • ½ cup fresh orange juice
  • 1 tablespoon lemon juice
  • 3 tablespoons champagne vinegar
  • ¼ cup extra virgin olive oil
  • ¼ cup light tasting olive oil or salad oil
  • 1 tablespoon minced shallot
  • 1 teaspoon orange zest
  • ¼ teaspoon dried thyme
  • a pinch salt
  • a pinch pepper

Instructions

  1. Zest the orange(s) and bring ½ cup of orange juice to a boil in a small pot.
  2. Reduce the heat and simmer until the orange juice is reduced by half.
  3. Pour the reduced orange juice into a bowl and add the remaining ingredients.
  4. Whisk to combine and adjust the flavor as needed.
  5. Refrigerate the dressing to let the flavors improve overnight.
