Ingredients

Pretzel Bites

  • 1 can biscuit dough
  • ¼ cup baking soda
  • 1 large egg
  • to taste pretzel salt

Beer Cheese

  • 2 tbsp butter
  • 1 tbsp flour
  • ½ cup milk
  • ½ cup beer
  • cups shredded cheddar cheese
  • ½ cup shredded gouda cheese
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper, spraying it with cooking oil.
  2. Boil about 6 cups of water in a large pot.
  3. Roll each biscuit into a rope and cut into four pieces.
  4. Once the water is boiling, add baking soda and then the pretzel dough pieces, cooking for 20 seconds per batch.
  5. Use a slotted spoon to remove the pretzel bites and place them on a paper towel-lined plate.
  6. Spread the pretzel pieces on the parchment-lined sheet, leaving space between them.
  7. Brush each piece with whisked egg and sprinkle with pretzel salt.
  8. Bake for 15-18 minutes or until golden brown.
  9. For the beer cheese, heat butter in a saucepan over medium-high heat, then whisk in flour and milk to create a roux.
  10. Add beer and bring to a simmer, then lower the heat and add cheddar, gouda, mustard, Worcestershire sauce, salt, pepper, paprika, and garlic powder.
  11. Whisk until melted and smooth, cooking for a few more minutes.
  12. Serve the pretzel bites with the beer cheese dip.
