Instructions
- Dissolve yeast and sugar in warm water and let sit until frothy.
- Mix 2 cups of flour and salt in a bowl, then add the yeast mixture and form a dough.
- Knead the dough for 8 minutes, adding more flour as needed until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise for 1 hour until doubled in size.
- Punch down the dough, flatten it, and cut into 16 wedges.
- Roll each wedge into a rope and cut into 1-inch sections, placing them on a baking sheet.
- Let the pretzel bites rise for 30 minutes.
- Preheat the oven to 425ºF and boil water in a pot, adding baking soda carefully.
- Boil the pretzel bites in batches for 90 seconds, then drain on a wire rack.
- Brush the boiled bites with an egg wash and sprinkle with salt if desired.
- Bake for 15-17 minutes until golden brown.
- Combine Parmesan, garlic powder, salt, and pepper in a bowl.
- Melt butter and pour over the baked pretzel bites, tossing to coat with the Parmesan mixture.
- Serve immediately.
