Ingredients

Dough

  • 1 cup warm water
  • 2 tsp active dry yeast
  • 2 tsp sugar
  • 3 cups all-purpose flour
  • ½ tsp salt

Pretzel Prep

  • ¼ cup baking soda
  • 1 large egg

Parmesan Garlic Topping

  • ¼ cup grated Parmesan
  • ¼ tsp garlic powder
  • tsp salt
  • to taste freshly cracked pepper
  • Tbsp butter

Instructions

  1. Dissolve yeast and sugar in warm water and let sit until frothy.
  2. Mix 2 cups of flour and salt in a bowl, then add the yeast mixture and form a dough.
  3. Knead the dough for 8 minutes, adding more flour as needed until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise for 1 hour until doubled in size.
  5. Punch down the dough, flatten it, and cut into 16 wedges.
  6. Roll each wedge into a rope and cut into 1-inch sections, placing them on a baking sheet.
  7. Let the pretzel bites rise for 30 minutes.
  8. Preheat the oven to 425ºF and boil water in a pot, adding baking soda carefully.
  9. Boil the pretzel bites in batches for 90 seconds, then drain on a wire rack.
  10. Brush the boiled bites with an egg wash and sprinkle with salt if desired.
  11. Bake for 15-17 minutes until golden brown.
  12. Combine Parmesan, garlic powder, salt, and pepper in a bowl.
  13. Melt butter and pour over the baked pretzel bites, tossing to coat with the Parmesan mixture.
  14. Serve immediately.
