Peanut Butter Filled Pretzel Bites

Instructions
- Combine warm water, brown sugar, yeast, and melted butter in a stand mixer bowl and let sit for 5 minutes.
- Add salt and flour, mixing on low speed until combined, then knead until smooth.
- Oil a bowl, place the dough inside, cover, and let rise until doubled in size, about 1 hour.
- Scoop peanut butter into small dots and freeze until hardened, about 30 minutes.
- Preheat the oven to 425°F.
- Divide the dough into 8 pieces, roll into ropes, and cut into 1-inch pieces.
- Press an indentation into each piece, add a dot of frozen peanut butter, and wrap the dough around it.
- Freeze the filled bites for 5 minutes.
- Boil water with baking soda, then boil pretzel bites in batches for about 30 seconds.
- Place boiled bites on a baking sheet, brush with egg wash, sprinkle with salt, and bake for 15 to 18 minutes.
- Let cool before serving, optionally with melted chocolate for dipping.
