Ingredients

Dough

  • cups warm water
  • teaspoons instant or active dry yeast
  • 1 tablespoon brown sugar or granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter, melted
  • 3¾ - 4 cups all-purpose flour

Baking Soda Bath

  • ½ cup baking soda
  • 9 cups water

Toppings

  • to taste coarse salt

Optional for Serving

  • to taste spicy cheese sauce or mustard

Instructions

  1. Whisk warm water, yeast, and sugar together and let sit until foamy.
  2. Add salt, melted butter, and flour, then mix until dough comes together.
  3. Knead the dough for 5 minutes until soft and slightly tacky.
  4. Cover the dough and let it rest for 10-30 minutes.
  5. Preheat the oven to 400°F (204°C) and prepare baking sheets.
  6. Divide the dough into 6 pieces and roll each into a 20-inch rope, then cut into 1.5 - 2 inch pieces.
  7. Boil water and baking soda, then dip pretzel bites for 10-15 seconds.
  8. Place bites on baking sheets and sprinkle with salt.
  9. Bake for 15 minutes or until golden brown and serve warm.
