Ingredients

Dough

  • ¼ oz. active dry yeast
  • cups warm water
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted
  • teaspoons salt
  • 4-4½ cups all-purpose flour

Boiling Solution

  • 8 cups water
  • ½ cup baking soda

Topping

  • 1 each egg yolk
  • 1 tablespoon cold water
  • to taste coarse salt

Instructions

  1. Dissolve yeast in warm water, then add sugar, butter, salt, and 2 cups of flour, mixing until smooth.
  2. Stir in enough remaining flour to form a soft, sticky dough.
  3. Knead the dough on a floured surface until smooth and elastic, about 6-8 minutes.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
  5. Bring 8 cups of water and baking soda to a boil in a large saucepan.
  6. Punch down the dough and divide it into 12 portions, rolling each into a log and shaping into pretzels.
  7. Boil the pretzels in batches for 30 seconds, then remove and drain on paper towels.
  8. Place pretzels on greased baking sheets, brush with a mixture of beaten egg yolk and cold water, and sprinkle with salt.
  9. Bake at 425°F (218°C) for 9-11 minutes or until golden brown, then cool on wire racks.
