Instructions
- Dissolve yeast in warm water, then add sugar, butter, salt, and 2 cups of flour, mixing until smooth.
- Stir in enough remaining flour to form a soft, sticky dough.
- Knead the dough on a floured surface until smooth and elastic, about 6-8 minutes.
- Place the dough in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
- Bring 8 cups of water and baking soda to a boil in a large saucepan.
- Punch down the dough and divide it into 12 portions, rolling each into a log and shaping into pretzels.
- Boil the pretzels in batches for 30 seconds, then remove and drain on paper towels.
- Place pretzels on greased baking sheets, brush with a mixture of beaten egg yolk and cold water, and sprinkle with salt.
- Bake at 425°F (218°C) for 9-11 minutes or until golden brown, then cool on wire racks.
