Ingredients

The dough

  • cups warm water
  • 1 packet active dry yeast
  • 1 tablespoon honey
  • ½ teaspoon kosher salt
  • 2 to 2¾ cups white whole wheat flour
  • 1 cup all-purpose flour
  • 1 large egg

The topping (optional)

  • tablespoons unsalted butter
  • to taste pretzel salt
  • to taste cinnamon sugar
  • to taste finely grated Parmesan
  • to taste Italian herbs
  • to taste everything bagel seasoning

Instructions

  1. Preheat the oven to 425°F and prepare two baking sheets with parchment paper.
  2. In a large bowl, combine warm water, yeast, and honey; let sit until foamy.
  3. Stir in kosher salt and gradually add the white whole wheat and all-purpose flour until the dough is smooth.
  4. Knead the dough for about 5 minutes and let it rise in a greased bowl for 30 minutes.
  5. Divide the dough into pieces, roll each into a rope, and shape into pretzels.
  6. Dip each pretzel in an egg wash and place on the prepared baking sheet.
  7. Bake for 10 minutes until golden brown, then brush with melted butter and add toppings.
