Ingredients

The dough

  • 1 ½ cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast
  • 22 ounces all-purpose flour
  • 2 ounces unsalted butter
  • Vegetable oil for pan

The boiling solution

  • 10 cups water
  • cup baking soda

The egg wash

  • 1 large egg yolk
  • 1 tablespoon water

Toppings

  • Pretzel salt
  • Cinnamon and sugar (optional)

Instructions

  1. Combine warm water, sugar, and kosher salt in a stand mixer bowl and sprinkle yeast on top; let sit for 5 minutes until foamy.
  2. Add flour and melted butter, mix on low speed, then knead on medium speed until smooth for about 4 to 5 minutes.
  3. Oil the bowl, place the dough back in, cover with plastic wrap, and let rise in a warm place for 50 to 55 minutes until doubled in size.
  4. Preheat the oven to 450°F and line two half-sheet pans with parchment paper, brushing lightly with vegetable oil.
  5. Boil 10 cups of water with baking soda in a large pot.
  6. Divide the dough into 8 pieces, roll each into a 24-inch rope, and shape into pretzels.
  7. Boil each pretzel in water for 30 seconds, then remove and place on the prepared pans.
  8. Brush each pretzel with the egg yolk and water mixture, then sprinkle with pretzel salt or cinnamon sugar.
  9. Bake for 12 to 14 minutes until dark golden brown, then cool on a rack for at least 5 minutes before serving.
