Homemade Soft Pretzels

Instructions
- Combine warm water, sugar, and kosher salt in a stand mixer bowl and sprinkle yeast on top; let sit for 5 minutes until foamy.
- Add flour and melted butter, mix on low speed, then knead on medium speed until smooth for about 4 to 5 minutes.
- Oil the bowl, place the dough back in, cover with plastic wrap, and let rise in a warm place for 50 to 55 minutes until doubled in size.
- Preheat the oven to 450°F and line two half-sheet pans with parchment paper, brushing lightly with vegetable oil.
- Boil 10 cups of water with baking soda in a large pot.
- Divide the dough into 8 pieces, roll each into a 24-inch rope, and shape into pretzels.
- Boil each pretzel in water for 30 seconds, then remove and place on the prepared pans.
- Brush each pretzel with the egg yolk and water mixture, then sprinkle with pretzel salt or cinnamon sugar.
- Bake for 12 to 14 minutes until dark golden brown, then cool on a rack for at least 5 minutes before serving.
